Sometimes there is nothing better than a little bit of golden toasted granola sprinkled on top of a smoothie bowl or munching on a handful for a snack!

But this is no ordinary granola… this is possibly the most delicious granola that you will ever taste.

Brazil nuts, cashew nuts, coconut flakes, sunflower seeds, flax seeds and rolled oats golden toasted to perfection in a healthy, nutty syrup… mixed with dried pineapple and banana chips… absolute perfection!

This recipe is refined sugar-free, gluten-free, vegan and totally healthy! It also contains healthy fats, plant-based protein & good carbs and therefore makes a good snack food/ addition to a healthy meal.

Enjoy sprinkled on top of a smoothie, a smoothie bowl, healthy banana ice cream, in a bowl with almond milk or just by itself!

Warning: due to it’s toasty deliciousness, it’s quite addictive (but still healthy)… you’ve been warned.

Ingredients:

-2 cups dry rolled oats
-100g raw cashew nuts
-150g raw Brazil nuts
-1 cup sunflower seeds
-1/4 cup flax seeds
-1 cup coconut flakes
-100g banana chips
-100g dried pineapple
-3 tablespoons 100% pure maple syrup
-2 tablespoons pure agave syrup
-3 tablespoons cold-pressed coconut oil
-4 teaspoons almond butter (or tahini)
-pinch sea salt

Instructions:

-preheat oven to 180 degree’s Celsius/ 360 Fahrenheit

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-mix the oats, sunflower seeds, flax seeds, almond butter, pure maple syrup, agave syrup, sea salt and melted coconut oil together in a mixing bowl until well blended

-add the coconut flakes, cashew nuts & Brazil nuts to the mix

-grease an oven tray with a little bit of extra coconut oil & spread the granola mix evenly onto the tray

-place in the oven and bake for 15-25 minutes, stirring the granola mix every 5 minutes

-once toasty and delicious, remove from the oven and leave to cool

-add the banana chips and dried pineapple

-eat & enjoy!

-once cooled, store in an airtight container to keep fresh

-munch on handful as a snack or enjoy sprinkled over smoothies, smoothie bowls or healthy banana ice cream! YUM!
