Simple Veggie Stir Fry
This super simple veggie stir fry is seriously easy to make, tastes like some kind of amazing veggie dream AND… it’s healthy!
That’s right… this yummy recipe is complete with healthy fats & good plant-based protein! It’s a healthy & well balanced meal.
I love making this simple veggie stir fry for a quick & easy dinner or lunch on a cold day! It just hits the spot. It’s also delicious added to a bed of fresh baby spinach & arugula with an extra squeeze of lemon juice – this makes a tasty salad (definitely worth a try).
Ingredients:
-2 medium carrots
-2 to 4 small zucchini’s (baby marrow)
-1 large red bell pepper
-100 grams long stemmed broccoli
-1/4 onion
-2 teaspoons cold-pressed macadamia nut oil (or another cooking oil)
-2 teaspoons Italian herb mix (or a mix of marjoram, oregano, thyme, rosemary, parsley)
-3 tablespoons tahini
-3 tablespoons raw pine nuts
-a squeeze of fresh lemon juice
-sea salt
-cracked black pepper
(serves 2 as a meal / serves 4 as a side dish)
Instructions:
-thinly slice the onion & add to a frying pan/ wok with the oil
-sautee until the onion starts to caramelise
-peel & thinly slice the carrots and zucchini’s (optional to peel)
-thinly slice the red bell pepper
-slice the long stemmed broccoli in half (from top to bottom)
-add the veggie to the pan with the Italian herb mix, sea salt, cracked black pepper & fresh lemon juice
-stir fry until cooked (don’t over cook)
-once cooked, remove pan from stove & stir the tahini into the veggie mix
-serve veggies and sprinkle with raw pine nuts
-eat & enjoy!
