Chocolate protein pudding I meal prep for easy snacks!
It’s not exactly easy to reach your protein goals every single day unless you meticulously track it..
So I wanna show you a high protein snack I often have in the afternoon.. and I’m gonna show you how you can make it with 28g protein – without any protein powder!
This snack also doubles as a way for me to satisfy my sweet tooth.. I seem to have this insatiable appetite for chocolate, so it’s best for me to be prepared for the chocolatey cravings..
So what I usually do is meal prep this chocolate protein pudding.. it only takes 5 minutes to make a whole big batch of it for a week.. and this is not like that pudding stuff we all grew up eating.. this has no added sugar in it, it’s healthy, it’s made from whole foods, and it actually tastes like real chocolate!
Ps. It’s really easy to make this dairy-free. I’ve added notes below!
Ingredients
- 4 cups plain yogurt (nonfat dairy or unsweetened soy)
- 12 medjool dates (pitted)
- 1/4 cup almond butter
- 2 to 3 tbsp cocoa powder
- 1 tsp vanilla extract
- Pinch of cinnamon
- Splash of water (to blend only if needed)
Steps
- To a blender add 4 cups plain yogurt (nonfat or unsweetened soy), 12 medjool dates (pitted), 1/4 cup almond butter, 2 to 3 tbsp cocoa powder, 1 tsp vanilla extract and a pinch of cinnamon. Blend until smooth, adding a small splash of water only if needed.
• Serve between 4 – 8 small jars/containers (covering with airtight lids) and store in the fridge for 4 to 5 days.
How to make it 28g protein: Use nonfat greek yogurt to get 28g protein for the same amount of calories! Using regular nonfat dairy yogurt, or unsweetened soy yogurt will still give you a high protein snack 🙂
Calories: 8 servings at 200 calories each, and 4 servings at 400 calories each
