Can you even blame me though? It’s totally yummy, it’s healthy and it’s completely guilt-free!
Can you say YES PLEASE? (I almost want to use that “in love” emoji right now – you know the “heart eyes” one… but is that a lame thing to do in a blog post? It probably is.) Okay back to the point – THIS CRUNCHY PB GRANOLA.
Yes, I’m a self confessed peanut butter addict. Yes, I’m obsessed with this recipe. And yes, I hope that you LOVE it as much as I do! xo
The Ingredients
2 cups rolled oats (dry)
6 Tablespoons unsweetened peanut butter
1/2 cup raw peanuts (shells removed)
3-4 Tablespoons 100% pure maple syrup (or xylitol syrup)
2 Tablespoons melted coconut oil
4 Tablespoons flax seeds
1 teaspoon ground vanilla powder/ pure vanilla extract
1/2 teaspoon cinnamon
pinch sea salt
The Method
-preheat oven to 180 degrees Celsius/ 360 Fahrenheit
-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt
-mix the oats, raw peanuts, flax seeds, peanut butter, pure maple syrup, melted coconut oil, cinnamon, vanilla and sea salt together in a mixing bowl until well blended
-grease an oven tray with extra coconut oil & spread the granola mix evenly onto the tray
-place in the oven and bake for 20-30 minutes, stirring the granola mix every 5 to 10 minutes
-once toasty and delicious, remove from the oven and leave to cool
-eat & enjoy!
-once cooled, store in an airtight container to keep fresh
-munch on handful as a snack, or eat with almond milk (like breakfast cereal)… or sprinkle over healthy banana ice cream!

Hi Liezl, what would the serving size be if eating this as a breakfast cereal?
Hi Liezl! Thank you for your lovely recipes! I’m trying to use your point system to be more mindful of my calories. I find it particularly hard to find low-calory granola and was wondering if you could give an approximate number of calories per 100g for your granola recipes! I love sprinkling some granola on my smoothies but they’re so high in calories! Thank you,
Vera
