I love making salad wraps for an easy lunch, especially when I don’t feel like having an entire salad – but I’d still like to get some greens in my diet. I love salad, but there are days that I just don’t feel like eating one. I used to make these a lot when I was trying to lose weight (I’ve lost 40 lbs) – and I’ve been having them a lot again lately.

The 4 basics of THE SALAD WRAP:

1. You need the lettuce shell – romaine lettuce leaves, cos lettuce, dinosaur kale, pak choi, bok choy, etc.

2. You need some healthy protein – hummus, free-ranged smoked chicken, chopped raw nuts, seeds, tahini, cashew nut cheese, grated cheddar cheese, cream cheese, feta cheese, etc.

3. You need some salad ingredients for toppings – chopped tomato, cherry tomatoes, olives, avocado, cucumber, chopped onion, roasted vegetables like butternut, etc.

4. You need a healthy dressing – 1 teaspoon olive oil + fresh lemon juice + sea salt + cracked pepper will do the trick nicely!
